These Easy Chocolate Almond Butter Cups are the perfect sweet candy treat when you want something indulgent, yet healthy! There’s only 3 ingredients, pretty easy to make and super yummy! 

You can make these jumbo sized or small cups depending if you want small bites to snack on or a healthy sized candy cup for dessert!  And guess what?  These are great for gifting!

Why WE Love These Easy Chocolate Almond Butter Cups

Super easy and amazing tasting chocolate almond butter treats that you can make mini or large sized!  

We used non-dairy chocolate chips and our favorite Almond Butter and just melted the chocolate with a little oil of choice, like coconut, vegetable or canola. 

Such an easy method!  We just lined muffin cups with some of the melted chocolate to line the bottom. Place it in a freezer for a couple of minutes until set, then scoop some of the almond butter filling on top of the chocolate in the muffin cups. At this time you can also add some almonds if you want the crunch factor!  Then top with more of the melted chocolate and chill until set.  Plus, you’re using healthy ingredients that are vegan!

Ingredients You Need

  • chocolate chips, we used non-dairy Enjoy Life
  • 2 tablespoons oil of choice, we used canola
  • Justin’s Vanilla Almond Butter  or any kind of almond butter or see below how to make your own almond butter
  • Optional: Almonds, Sea Salt, maple syrup

How to Make Easy Chocolate Almond Butter Cups

  1. Melt 1/2 of chocolate chips and 1 tablespoon oil together in the microwave in 30-second increments, until completely melted, stirring after each burst.
  2. Line muffin cups with some of the melted chocolate to line the bottoms and spread out.
  3. Place in freeze for a couple of minutes until set, then scoop some of the almond butter filling on top of the chocolate in the muffin cups. At this time you can also add some almonds if you want the crunch factor!
  4. Again, melt remainder of chocolate chips and 1 tablespoon oil together in the microwave in 30-second increments, until completely melted, stirring after each burst and top with more of the melted chocolate and chill until set.
  5. Place in sealed container at room temperature. Can refrigerate, then thaw when ready to devour!

What Kind of Pans Can You Use?

If you have silicone or mold pans that’s great!  Otherwise, use a mini muffin pan (24 cups) or a regular muffin pan (12 cups) and line with candy or muffin liners.  I spray them with non-cooking spray to help them release easier.

How to Make Easy Almond Butter!

  1. You can use any almond butter to make these or make your own homemade almond butter by using a good food processor or blender. 
  2. Just preheat the oven to 350 degrees Fahrenheit and spread the almonds across a large, rimmed baking sheet and toast the almonds for 10 minutes, stirring halfway. 
  3. Transfer the almonds to a high-speed blender or food processor and blend until creamy. 
  4. Once the almond butter is very smooth and creamy , you can even take it up a notch by blending in any add-ins you would like.  Sea salt, vanilla or maple syrup are super yummy!  I’m a huge fan of all!

For large cups, we layered it as so:
2 teaspoons melted chocolate
1 tablespoon almond butter
