Ingredients for Easy Vegan Fluffy Blueberry Muffins

Easy Vegan healthy blueberry muffin recipe

  • 1 cup unsweetened almond milk or any non-dairy milk will work such as oat milk, soy milk, coconut milk
  • 2 tablespoons lemon juice (1 lemon – can also use lemon zest from lemon)
  • 1/3 cup canola oil – can also sub with melted vegan butter, avocado oil or melted coconut oil
  • 1/2 cup organic sugar – can also sub with maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries – frozen blueberries can be used
  • Optional: Top with more organic sugar on top for more sweetness

Lemon Glaze

  • 1 cup organic powdered sugar
  • 2 tablespoons lemon juice, from 1 lemon
  • Optional: lemon zest

Instructions How to Make Blueberry Muffins

  1. Preheat oven to 425°F. Line a muffin tin with muffin liners, or spray tins with non-stick cooking spray. Set aside.
  2. In a large bowl, combine the milk, lemon juice/zest together and allow the mixture to curdle for up to 5 minutes.
  3. Whisk in the oil, sugar and vanilla to the curdled mixture to mix together.
  4. Follow with dry ingredients of flour, baking powder, baking soda, and salt, stirring until just combined with lumps in the mixture.  Fold in the blueberries.
  5. Using a large cookie scoop, fill each muffin cup about full with the batter, and then sprinkle tops with sugar if desired. 
  6. Bake for 13-15 minutes in your muffin pan, or until a toothpick inserted into the center of a muffin comes out cleanly. Remove muffins from the oven, and allow to cool for five minutes in the pan, and then transfer to a cooling rack to cool completely.
