Ingredients for Easy Vegan Fluffy Blueberry Muffins
Easy Vegan healthy blueberry muffin recipe
- 1 cup unsweetened almond milk or any non-dairy milk will work such as oat milk, soy milk, coconut milk
- 2 tablespoons lemon juice (1 lemon – can also use lemon zest from lemon)
- 1/3 cup canola oil – can also sub with melted vegan butter, avocado oil or melted coconut oil
- 1/2 cup organic sugar – can also sub with maple syrup
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups fresh blueberries – frozen blueberries can be used
- Optional: Top with more organic sugar on top for more sweetness
Lemon Glaze
- 1 cup organic powdered sugar
- 2 tablespoons lemon juice, from 1 lemon
- Optional: lemon zest
Instructions How to Make Blueberry Muffins
- Preheat oven to 425°F. Line a muffin tin with muffin liners, or spray tins with non-stick cooking spray. Set aside.
- In a large bowl, combine the milk, lemon juice/zest together and allow the mixture to curdle for up to 5 minutes.
- Whisk in the oil, sugar and vanilla to the curdled mixture to mix together.
- Follow with dry ingredients of flour, baking powder, baking soda, and salt, stirring until just combined with lumps in the mixture. Fold in the blueberries.
- Using a large cookie scoop, fill each muffin cup about full with the batter, and then sprinkle tops with sugar if desired.
- Bake for 13-15 minutes in your muffin pan, or until a toothpick inserted into the center of a muffin comes out cleanly. Remove muffins from the oven, and allow to cool for five minutes in the pan, and then transfer to a cooling rack to cool completely.
- Top with lemon glaze if you want by mixing together the organic powdered sugar and lemon together and drizzle on top of muffins. Let glaze set.
