These delicious healthy cookie dough bites are so simple to make using simple ingredients like dates, tahini, peanut butter, applesauce and garbanzo flour.  We simply process the ingredients together and fold the chocolate chips in. 

Put the cookie dough mixture in a dish and cut them into squares, and they’re ready to be devoured!  No need to feel guilty eating these bad boys as they contain all pretty healthy ingredients.

For the best texture we recommend to chill them in the refrigerator for an hour or so.  However, we won’t blame you if you can’t wait!  They’re still really delicious without chilling.

What Flour Should I Use?

We used garbanzo flour to thicken up the cookie dough bites.  It’s also known as chickpea flour.  This type of flour is simply finely milled garbanzo beans. Garbanzo flour is safe to eat raw (regular flour is not).  It’s also healthy and contains a lot of fiber.  It works really well in this recipe to get the texture we were looking for.

In case you can’t get garbanzo flour you could use coconut flour, oat flour, or almond flour. 

You could also substitute all-purpose flour, but you need to bake the flour at 350F for about 5 minutes first to ensure it’s safe to eat.

How to Make Healthy Vegan Chocolate Chip Cookie Dough

  1. In a food processor combine dates, tahini, peanut butter, & vanilla. Process until smooth.
  2. Empty the food processor contents into a mixing bowl and add the garbanzo flour and applesauce. Mix well. Fold in chocolate chips.
  3. Spread the cookie dough onto a small/medium dish. Slice it up and enjoy! We recommend to keep the dough chilled for best texture.
