Here’s a recipe that is just perfect to whip up on a whim for energy boosts, or just when you’re craving something sweet. These healthy raw vegan chocolate chip cookie dough bites are loaded with healthy calories.
These delicious healthy cookie dough bites are so simple to make. We simply process the ingredients together and fold the chocolate chips in. Put them in a dish and cut them into squares, and they’re ready to be devoured! No need to feel guilty eating these bad boys as they contain all pretty healthy ingredients.
For the best texture we recommend to chill them in the refrigerator for an hour or so. However, we won’t blame you if you can’t wait! They’re still really delicious without chilling.
Garbanzo flour?!
We used garbanzo flour to thicken up the cookie dough bites. It’s also known as chickpea flour. This type of flour is simply finely milled garbanzo beans. Garbanzo flour is safe to eat raw (regular flour is not). It’s also healthy and contains a lot of fiber. It works really well in this recipe to get the texture we were looking for.
In case you can’t get garbanzo flour you could use coconut flour, oat flour, or almond flour. You could also substitute all-purpose flour, but you need to bake the flour at 350F for about 5 minutes first to ensure it’s safe to eat.
