How to Heat Treat Flour

If you’re worried about eating raw cookie dough, here’s how to heat-treat your flour if you want to be extra safe.

  • Microwave: Place flour in a microwave safe bowl or dish.  Heat for 30-45 seconds, up to 1 minute. Check the temperature of the flour using an instant read thermometer of 160F.  After heat treating, if there are clumps of flour, be sure to run the flour through a sifter to help break up any clumps to prevent any lumps in your dough.
  • Oven: Preheat oven to 350F degrees.  Spread the flour out onto a large baking sheet.  Bake for about 5 minutes, making sure the flour is not browned or toasted looking.  Ensure that the flour reached an internal temperature of 160F by using an instant read thermometer.

Instructions How to Make No-Bake Chocolate Chip Cookie Dough Bars

Vegan Edible Cookie Dough

  1. Heat treat the flour either by oven or microwave – See notes in recipe card or in this post below
  2. In a large mixing bowl, using a mixer, cream the butter and sugar. Butter should be room temperature.
  3. Add in salt and vanilla and stir together.
  4. Add in flour and mix.
  5. Slowly add in non-dairy milk until desired consistency. It’s important to note that the mixture will be dry and crumbly before you add the milk at the end. Be sure to add it slowly, just until the dough reaches your desired consistency.
  6. Add in chocolate chips.
  7. Press into the pan and make some delicious melted chocolate ganache for delicious No-Bake Chocolate Chip Cookie Dough Bars

  • Place the chocolate chips and non-dairy milk into a microwave-safe bowl to melt. Microwave in 30-second intervals, stirring each time, until the ganache is melted and smooth.
  • Cut into bars and store in an airtight container in the fridge or freezer to chill.

You can make these cookie dough squares as large or as small as you want.  They are rich and delish, so a small square of cookie dough is quite satisfying for me, but for major cookie dough lovers, go at it hard and heavy.  We won’t stop you!

More Variations For Your Vegan Cookie Dough Bars

  • Skip the brown sugar and use maple syrup, but make sure not to add too much because the bars may not firm up. Maybe start with 1/4 cup and taste test and check the texture before adding more.
  • Add some crunch by adding some nuts like pecans, walnuts or cashews!
  • Don’t want to use all-purpose flour? You can use oat flour or almond flour as a replacement if you wish.

  • 1/2 cup vegan butter
  • 1 cup organic brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup non-dairy milk
  • 1 1/4 cups all purpose flour* must be heat-treated, see notes
  • 1/2 teaspoon salt
  • 1/2 cup mini vegan chocolate chips like 'enjoy life'

Chocolate Ganache

  • 3/4 cup chocolate chips like 'enjoy life'
  • 1/4 + 2 tablespoons coconut milk or almond milk

  • Add in flour and mix.
  • Slowly add in non-dairy milk until desired consistency. It’s important to note that the mixture will be dry and crumbly before you add the milk at the end. Be sure to add it slowly, just until the dough reaches your desired consistency.

  • Place the chocolate chips and coconut milk/almond milk into a microwave-safe bowl. Microwave in 30-second intervals, stirring each time, until the ganache is melted and smooth.
  • Pour the ganache over the top of the cookie dough, spreading so that it covers the dough evenly. Refrigerate or freeze until the chocolate is firm.
  • Cut into bars and store in an airtight container in the fridge or freezer.
