3 Ingredient Vegan Cookies recipe - Simple, Quick, Easy, Delicious.

Ingredients You Need

  • 2 large ripe bananas
  • 2-4 tablespoons natural peanut butter 
  • 2 cups oats of choice, use quick or old-fashioned oats or a mixture of both depending what type of texture you want. Can also use gluten-free.
  • Optional raw sugar, dried fruits, dairy-free chocolate chips, nuts optional

Instructions How to Make Vegan 3 Ingredient Peanut Butter Banana Cookies

  1. Preheat oven to 375°F
  2. Spray cookie sheet with cooking spray or line with parchment paper.
  3. Mix and mash bananas until smooth.
  4. Blend in the peanut butter.
  5. Stir in oats, do not overmix the oat batter. (At this time you can also mix in add-ins-like dried fruits, chocolate chip, nuts could be added in at this point, or placed on top of cookies when placed on baking sheet or both.
  6. Using a medium scoop, you can scoop or form dough into 1½” balls and place on baking sheet. Gently pat them down cookies with finger-tips or back of spoon or leave as is. They bake the shape they are formed. Add more add-ins like raw sugar, dried fruits, chocolate chip, nuts if you want.
  7. Bake at 375°F for 15 minutes or until set. Cookies will have a toasty, texture on the outside and be moist on the inside. So yummy!

Storing Cookies

  • Store cookies in an airtight container in the refrigerator for up 4-5 days.

Freezing Cookies

  • Freeze cookies up to 3 months in the freezer.  To enjoy, remove frozen cookies and thaw overnight in the refrigerator.

More Variations

  • Besides peanut butter, you could use your favorite nut butter, be it almond butter, sunflower seed butter or cashew butter!
  • For some added texture & fiber, add in some sunflower seeds, flax or chia seeds.
  • Use dairy-free milk chocolate chips, semi-sweet chocolate chips or dark chocolate chips.
