These easy-to-make, yummy 3 ingredient peanut butter banana cookies make the perfect treat in a hurry.  You literally only need ripe bananas, peanut butter, and oats to make these cookies. 

No mixer, one bowl and a fork for mashing the banana and mixing it all up.  It could not be easier!!
 


Of course, you can add all sorts of goodies to these cookies too, like dried cranberries, craisins, chocolate chips, raisins, walnuts, pecans…just enjoy!  Add-ins can be added in with the cookie dough or you can place them on top before baking or do both.  


These are also cookies your kid will love and the best part is they are healthy!  I love to keep them on standby as a delicious snack or quick energy boost!

Peanut Butter Banana Cookies - 3 Ingredient

Yummy and easy vegan cookies! Banana, oats and banana! We love them with chocolate chips!

Ingredients

  • 2 large bananas ripe
  • 2-4 tbsp peanut butter
  • 2 cups oats of choice Use quick or old-fashioned rolled oats or a mixture of both depending what type of texture you want. Can also use gluten-free.
  • Optional Raw sugar, dried fruits, chocolate chips, nuts optional

Instructions

  • Pre heat oven to 375°F
  • Spray cookie sheet with cooking spray or line with parchment paper.
  • Mix bananas until smooth.
  • Blend in the peanut butter.
  • Stir in oatmeal, do not over mix. (Add-ins-like dried fruits, chocolate chip, nuts could be added in at this point, or placed on top of cookies when placed on baking sheet or both.
  • Using a medium scoop, you can scoop or form dough into 1½” balls and place on baking sheet. Gently pat them down cookies with finger-tips or back of spoon or leave as is. They bake the shape they are formed. Add more add-ins like raw sugar, dried fruits, chocolate chip, nuts if you want.
  • Bake at 375°F for 15 minutes or until set. Cookies will have a toasty, texture on the outside and be moist on the inside. So yummy!

Notes

Variations: Add up to 1  cup of chopped dates, chocolate chips, raisins, nuts, or dried cranberries.  Reserve some for adding on top of cookies if desired.
