This yummy vegan banana loaf  is loaded with lots of sweet & tangy strawberries in each delightful mouthful!  We couldn’t stay out of it!  🙂 It’s super delectable with vegan butter smothered on top of a thick slice, o.m.g!

When you want a different flavor twist on your banana bread,  the strawberries give it a totally different vibe. The strawberry banana flavor explosion is a winner, so we’re good!

We even threw in some walnuts.  You are more than welcome to add in some vegan chocolate chips!

 Vegan Banana Bread with Strawberries Ingredients

Vegan Banana Bread with Strawberries Recipe

  • ½ cup applesauce, unsweetened
  • 2 large ripe bananas = 1 cup mashed – measured
  • 1/3 cup melted vegan butter cooled to room temperature or oil of choice
  • 2/3 cup brown sugar or sugar of choice
  • 1/3 cup almond milk or milk of choice
  • 2 cups all purpose flour or gluten free flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup rough chopped walnuts, optional
  • 1 1/2 cups strawberries hulled and chopped or if using frozen, thaw and drain juice for best results.

How to Make Vegan Banana Bread with Strawberries

  1. Preheat the oven to 350 degrees F and spray a 9×5 baking loaf bread pan with non-stick cooking spray or line with parchment paper and grease.
  2. In a large bowl, mash the bananas with a fork until smooth. Stir the melted vegan butter into the mashed bananas.
  3. Whisk or stir in the brown sugar, almond milk and applesauce.
  4. Whisk in the soda and salt to the bowl with the wet ingredients, then add the flour and stir until just combined, making sure you don’t over mix.
  5. Gently fold in the strawberries and walnuts.
  6. Pour into the prepared pan, place in the center rack of the oven and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let it cool in the pan for a few minutes, then transfer the loaf to a cooling rack. Let the banana bread cool for at least 30 minutes before slicing for nice slices. Serve and enjoy!

Substitutions

  • Could also substitute non-dairy yogurt option for applesauce.
  • Change out the strawberries with raspberries, blueberries or blackberries for a switcheroo!

  1. Can I use flaxseed to substitute for the applesauce? If so what would be the measurements for that? Thank you ! Looks delish 😍

    1. Yes, you can use flaxseed as a substitute for applesauce, but it will serve more as a binding agent than a source of moisture and sweetness. To replace the 1/2 cup of applesauce, you can use a “flax egg” mixture. To make a flax egg, mix 1 tablespoon of ground flaxseed with 2.5 tablespoons of water and let it sit for a few minutes until it thickens. Since 1/2 cup is approximately 8 tablespoons, you might need to make 4 flax eggs (4 tablespoons of ground flaxseed mixed with 10 tablespoons of water).

      However, keep in mind that flaxseed won’t provide the same sweetness and moisture as applesauce, so the texture and taste of the bread may vary.
