Ingredients You Need for Vegan Caramel Apple Cake Recipe
Vegan Apple Cake Ingredients
- 3 Tbsp ground flaxseed (+½ cup water to make flax eggs)
- 3 cups flour
- ½ tsp cinnamon (optional)
- ½ tsp salt
- 2 tsp baking soda
- 20 oz canned apple pie filling (works with other pie fillings too!)
- 1 cup organic sugar (or brown sugar)
- 2 tsp vinegar
- ½ tsp vanilla extract
- 1 can full fat coconut milk (13.5 oz)
Vegan Caramel Sauce Ingredients
- ¼ cup pure maple syrup
- ½ tsp vanilla extract
- 6 pitted dates (deglet noor) (or 3-4 medjool dates)
How to Make Vegan Caramel Apple Cake
- Preheat oven to 350°F, and grease a 13×9 glass baking dish. (If you want to use a metal dish then preheat to 375°F)
- In a medium bowl make 3 flax eggs by combining 3 Tbsp ground flax with ½ cup of water. Stir and let sit for at least 5 minutes.
- In a large mixing bowl combine: 2 tsp baking soda, 3 cups flour, 1/2 tsp cinnamon (optional), and 1/2 tsp salt. Stir it up and remove any lumps.
- Add all of the other cake ingredients into the large bowl with the dry ingredients: canned pie filling, 1 cup sugar, 2 tsp vinegar, ½ tsp vanilla, can of coconut milk, and the flax eggs. Stir it up well with a wooden spoon.
- Spread the batter evenly onto the greased baking dish. Bake at 350°F for 50 minutes or until a toothpick comes out clean.
Make the Caramel
- While the cake is baking, you can make the caramel sauce. Combine all sauce ingredients in a food processor or blender and mix until smooth.
Put it All Together
- After the cake is removed and cooled a bit you can spread or drizzle the caramel sauce on top of the cake. Enjoy the cake warm or cold, and perhaps with some vanilla vegan ice cream!

We found out you can actually use other pie fillings in this cake too! We made it with cherry pie filling and it was tremendous! I think you could use just about any canned pie filling in this cake.
