We used applesauce instead of 2 eggs as the original apple fritter recipe calls out to make them vegan happy! Flax eggs can also be used if you don’t have applesauce on hand.
Of course, we used almond milk to make them dairy-free. You can substitute any non-dairy milk or milk you have on hand. For the non-dairy butter, we used Earth Balance.
They will be sooo delicious and they are fairly easy to prepare the layers for your assembly of muffin batter, apple chunks. streusel and lastly the vanilla glaze. It’s such a basic recipe, it’s hard to believe that it doesn’t require more ingredients and more work, as good as they taste! Yay!

Vegan Apple Fritter Muffins
Ingredients
Brown Sugar/Cinnamon Streusel:
- 1/3 cup light brown sugar
- 1 teaspoon ground cinnamon
Muffin Batter
- 1/2 cup non-dairy butter, softened
- 2/3 cup sugar
- 1/2 cup unsweetened applesauce
- 1 1/2 teaspoons vanilla extract
- 1 1/2 cups all-purpose flour or gluten-free flour like Bob's Red Mill
- 1 3/4 teaspoons baking powder
- 1/2 cup almond milk
Chopped Apple Mixture
Old-Fashioned Vanilla Creme Glaze
- 1/2 cup of powdered sugar
- 1-3 tablespoons of non-dairy milk - depending on thickness of glaze wanted. For more apple fritter style like the apple fritter donut- use more milk for a thinner glaze that you can pour over the whole muffin.

- Preheat oven to 350 degrees. Use a 12 serving muffin tin and line with cupcake liners and spray with non-stick cooking spray. Can also use silicone or any muffin tin, just spray with non-stick cooking spray.
First:
Apples
- Apples like Granny Smith or any tart/crisp apple. Peel if prefer and chop small, but not fine and not large, because the apples will not cook through all the way. Measure out 2 tablespoons sugar and 1 teaspoon cinnamon and add to toss with apples just before adding it to the muffin batter. Set all aside.
Make Brown Sugar/Cinnamon Streusel
- Mix 1/3 cup brown sugar and 1 teaspoon cinnamon together in a bowl. Set aside.
Make Muffin Batter:
- Combine & whisk 1 & 1/2 cups flour and 1 & 3/4 teaspoons baking powder together in another bowl and set aside.
- Beat in applesauce or flax eggs until blended in; add in 1 & 1/2 teaspoons vanilla extract and mix in until combined. Will not be completely smooth, that's fine.
- Add the flour mixture into creamed butter mixture and mix until blended.
- Mix 1/2 cup milk into batter and continue mixing until smooth.
- Then sprinkle a teaspoon or two of the brown sugar/cinnamon mixture on top of apple layer.
- Repeat all the layers again. Can swirl the mixture with a knife if you wish for swirl effect if you wish.
- Bake in the preheated oven until a toothpick inserted in the center of the muffin comes out clean, approximately 20-25 minutes.
Vanilla Creme Glaze
- To make glaze, mix powdered sugar and non-dairy milk together until well mixed. If powdered sugar is too lumpy or not mixing well with the milk, place in microwave for 20 seconds and it will melt a bit. No worries, it will firm up when cooled.
- Let muffins cool for about 15 minutes before drizzling with glaze.
