And we cannot resist the dreamy orange cream cheese frosting on top.  Adding it, really brings out that fantastic burst of orange flavor and it’s invigorating.  It makes us soooo happy!!  Who doesn’t like a burst of orange flavor?

Shortcut!  You can use your favorite tub of  cream cheese frosting like Pillsbury, Duncan Hines or Miss Jones, all vegan of course, then add in 1/4 cup of orange juice and whip it up, if you don’t want to make the easy homemade cream cheese version!   I won’t judge!

We used applesauce, bananas, orange juice in our muffins.  These are perfect for spring and summer brunches, breakfast at home or on the go, picnics and snacking time.

The frosting is optional, if you are wanting to be more healthy, but it’s totally worth it.  You can adjust how much you put on top.  Change out the all-purpose flour for gluten-free flour like Bob’s Red Mill or use a combination of whole-wheat flour and all-purpose flour as well.

OMG! Right out of the oven, these are excellent slathered with some vegan butter.  But, you don’t get the full flavor of muffins right out of the oven unless you add butter, if you ask me, but we just gotta have a taste!

Which leads me to….Have you ever had banana or citrus muffins or bread the next day after baking a batch and noticed it is pretty much tastier, moister and fruitier?  Olive oil will make it a little denser, while canola oil will make it lighter.  I’ve been hearing a lot of grapeseed oil is being used in baking, however I haven’t had the pleasure.  Melted coconut oil or vegan butter also yum!

Always remember for a twist of fun, you can always add in some dairy-free chocolate chips if you love orange, banana and chocolate together, some walnuts for some nutty flavor or some cranberries for a seasonal fall and winter vibe.
