Notes

vegan orange banana muffins with cream cheese frosting recipe

OMG! Right out of the oven, these vegan orange banana muffins are excellent slathered with some vegan butter.  Or maybe a yummy orange marmalade!

Which leads me to….Have you ever had banana or citrus muffins or bread the next day after baking a batch and noticed it is pretty much tastier, moister and fruitier?

As far as using fats in these muffins, olive oil will make these muffins a little denser, while canola oil will make them lighter.  I’ve been hearing a lot of grapeseed oil is being used in baking, however I haven’t had the pleasure.  Melted coconut oil or vegan butter also are great options!
