Vegan Chocolate Chip Banana Bread Bars

These healthy Chocolate Chip Banana Bread Bars are an easy way to use up ripe bananas.  They taste so moist and yummy and are pretty irresistible to turn down. Kids love them as a snack!

  • Preheat your oven to 350F. Lightly grease an 8" x 8" square baking pan, or line with parchment paper and lightly spray with non-stick cooking spray.
  • Add the mashed banana, brown sugar, non-dairy milk, and vanilla extract to a large bowl and mix well. Stir in the flour, baking soda, and salt.
  • Fold in 1/2 of the chocolate chips and save the rest for the top of the banana bars to make them look pretty.
  • Pour the thick batter into the baking pan and spread evenly in the pan. Sprinkle the remaining chocolate chips on top.
  • Bake 15 to 20 minutes until a toothpick inserted in the center comes out clean. Let cool for at least 10 minutes before slicing.
  • Cut into bars and enjoy bars warm or let cool completely. Store in an air-tight container or ziplock bag
