This is an easy 15-minute sauce that can be used for pasta or rice. It's super flavorful, creamy, rich, and comforting. The star ingredients of this sauce are full-fat coconut milk, diced tomatoes with chiles, mushrooms, and peppers.

Ingredients

  • 1 can diced tomatoes w/ chiles (~14.5oz)
  • 1 can coconut milk (full fat, ~13.5oz)
  • 8 oz mushrooms sliced
  • 2 cups bell pepper chopped
  • 3 cloves minced garlic
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp dried basil (or a handful of fresh basil)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 Tbsp nutritional yeast
  • 1 Tbsp tomato paste

Instructions

  • Heat a skillet on medium. After it's hot add 1 Tbsp of water, and add the mushrooms, bell peppers, and garlic. Cook for 4-5 minutes stirring often.
  • Add remaining ingredients to the skillet and cook on medium-low for another 5 minutes.
  • The sauce goes great on pasta or rice.
