EASY CHOCOLATE ALMOND BUTTER CUPS

Chocolate Almond Butter Cups are the perfect sweet candy treat when you want something indulgent, yet healthy!  You can make these jumbo sized or small cups depending if you want small bites to snack on or a healthy sized candy cup for dessert!  And guess what?  These are great for gifting! There’s only 3 ingredients, pretty easy to make and super yummy!

  • Melt 1/2 of chocolate chips and 1 tablespoon oil together in the microwave in 30-second increments, until completely melted, stirring after each burst.
  • Line muffin cups with some of the melted chocolate to line the bottoms and spread out.
  • Place in freeze for a couple of minutes until set, then scoop some of the almond butter filling on top of the chocolate in the muffin cups. At this time you can also add some almonds if you want the crunch factor!
  • Again, melt remainder of chocolate chips and 1 tablespoon oil together in the microwave in 30-second increments, until completely melted, stirring after each burst and top with more of the melted chocolate and chill until set.
  • Place in sealed container at room temperature. Can refrigerate, then thaw when ready to devour!

Notes

For large cups, we layered it as so:
2 teaspoons melted chocolate
1 tablespoon almond butter
2 teaspoons melted chocolate
