Ingredients

BERRY SPINACH SALAD RECIPE

  • 6 - 8 cups baby spinach
  • 1 cup fresh blueberries
  • 1 cup fresh strawberries
  • 1 cup fresh raspberries
  • 1 cup roasted or candied pecans
  • Optional: 1/2 cup crumbled vegan feta cheese
  • Optional: red onion sliced

STRAWBERRY DRESSING INGREDIENTS RECIPE

  • 1/4 cup olive oil
  • 1/4 cup red vinegar apple cider vinegar or regular vinegar
  • 2 teaspoons Dijon mustard
  • 1/4 cup vegan strawberry jam or preserves add more if desired (can also mash or blend strawberries and add some agave syrup or maple syrup to make a jam.
  • salt/pepper

Instructions

How to Make the Berry Spinach Salad with Strawberry Salad Dressing

  • In a large salad bowl, add in the leafy green spinach followed by the fresh berries and pecans and whatever else you want to add in to make your salad amazing!
  • In a small measuring cup or bowl, whisk together the vinaigrette ingredients until well combined, then add salt and pepper to taste. Pour into a jar if storing in the fridge and cover.
  • Just before serving, drizzle in enough vinaigrette to lightly toss to coat the spinach leaves for the whole salad or serve individually.  Serve immediately and enjoy!
