Dill Pickle Pasta Salad

Ingredients

  • 4 cups dry pasta of choice
  • 1/2 cup dill pickle juice
  • 1 1/4 cups dill pickles chopped
  • 1 1/2 cups vegan cheddar cheese diced into cubes
  • 1/4 cup onion diced
  • 1/4 cup celery diced
  • 1 cup vegan mayonnaise
  • 1/2 cup vegan sour cream
  • 1/8 teaspoon garlic powder
  • Optional: 2 tablespoons fresh dill or dried dill
  • salt
  • black pepper

Instructions

  • Cook pasta al dente, according to package directions. Drain and transfer to large bowl.
  • Add pickle juice to pasta and mix to coat. Set aside and allow to cool.
  • Add pickles, cheese, celery and onion to pasta.
  • In a small bowl, combine mayonnaise, sour cream, garlic powder, salt, pepper and dill. Stir until blended.
  • Add dressing to pasta in bowl and toss the pasta to coat.  Add some fresh ground pepper to the top of the pasta salad if desired.
  • Refrigerate until ready to serve.
