Dill Pickle Pasta Salad

- 4 cups dry pasta of choice
- 1/2 cup dill pickle juice
- 1 1/4 cups dill pickles chopped
- 1 1/2 cups vegan cheddar cheese diced into cubes
- 1/4 cup onion diced
- 1/4 cup celery diced
- 1 cup vegan mayonnaise
- 1/2 cup vegan sour cream
- 1/8 teaspoon garlic powder
- Optional: 2 tablespoons fresh dill or dried dill
- salt
- black pepper
Cook pasta al dente, according to package directions. Drain and transfer to large bowl.
Add pickle juice to pasta and mix to coat. Set aside and allow to cool.
Add pickles, cheese, celery and onion to pasta.
In a small bowl, combine mayonnaise, sour cream, garlic powder, salt, pepper and dill. Stir until blended.
Add dressing to pasta in bowl and toss the pasta to coat. Add some fresh ground pepper to the top of the pasta salad if desired.
Refrigerate until ready to serve.
