Ingredients

  • ½ cup unsalted vegan butter melted
  • 1 cup organic brown sugar
  • 1 flax egg with 3 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ cup canned pumpkin puree
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 1 cup all-purpose flour

Instructions

  • Make flax egg by mixing flaxseed and water together to set for 5 minutes until thickened.
  • Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper and lightly grease with cooking spray. Set aside.
  • In a large bowl, combine the melted vegan butter and brown sugar. Mix thoroughly. Add in the flax egg and vanilla extract.
  • Mix in the pumpkin puree and make sure all of the wet ingredients are thoroughly mixed.
  • Add in the salt, flour and pumpkin pie spices.
  • Pour and spread the brownie mixer in the baking dish and spread out evenly with a plastic spatula.
  • Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean and top is set.
