Ingredients
½cupunsalted vegan buttermelted
1cuporganic brown sugar
1flax egg with 3 tablespoons water
1teaspoonvanilla extract
½cupcanned pumpkin puree
1teaspooncinnamon
½teaspoonnutmeg
¼teaspoonsalt
1cupall-purpose flour
Instructions
Make flax egg by mixing flaxseed and water together to set for 5 minutes until thickened.
Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper and lightly grease with cooking spray. Set aside.
In a large bowl, combine the melted vegan butter and brown sugar. Mix thoroughly. Add in the flax egg and vanilla extract.
Mix in the pumpkin puree and make sure all of the wet ingredients are thoroughly mixed.
Add in the salt, flour and pumpkin pie spices.
Pour and spread the brownie mixer in the baking dish and spread out evenly with a plastic spatula.
Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean and top is set.
