DATE LAYER

  • 16-20 pitted Medjool dates split in half
  • PEANUT BUTTER LAYER

PEANUT BUTTER LAYER

  • 1/2 cup natural creamy peanut butter I like Jif no sugar added, or you could also use a chunky peanut butter, add more if you want a thicker peanut butter layer

CHOCOLATE LAYER

  • 1/2 to 1 cup dairy-free chocolate chips or dark chocolate chips depending on how thick you want your chocolate layer
  • 2 tablespoons peanut butter or 1 teaspoon coconut oil

TOPPINGS

  • 1/2 cup chopped almonds peanuts, pistachios, cashews, pumpkin seeds, walnuts, pecans
  • flaky sea salt

    DATE LAYER

    • Slice each date in half and lay them flat on a sheet of parchment paper on a large baking sheet. Cover dates with another sheet of parchment and use a rolling pin to flatten them or use a the bottom of a cup and smash them down.

    PEANUT BUTTER LAYER

    • Melt the peanut butter in the microwave for 10-15 seconds until runny looking. Drizzle, then pread it evenly over the flattened dates with the back of a spoon.
    • In a microwave-safe bowl, combine the chocolate chips and peanut butter or coconut oil.  Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

    CHOCOLATE LAYER

    • Pour the melted chocolate over the peanut butter layer. Use a spatula or the back of a spoon to spread it evenly.

    TOPPINGS

    • Top with chopped nuts and sea salt for next level yumminess!
    • Refrigerate this dairy-free date bark in the refrigerator for at least 1 - 2 hours until fully set. Once bark is set, cut the date bark into bite-sized pieces using a sharp knife.
