Ingredients

EASY MEXICAN RICE BOWL RECIPE

  • 2 - 3 cups of your favorite salad greens spinach, kale, romaine, arugula. iceberg or butter
  • 1/2 cup corn canned & drained or grilled
  • 1 cup black beans drained and rinsed
  • 1 cup brown rice cooked (I use Minute Rice)
  • 1/4 cup salsa
  • 10 cherry tomatoes
  • fresh cilantro

AVOCADO RANCH DRESSING

  • 1/2 cup Vegan Ranch Dressing
  • 1 avocado diced

Instructions

How to Make Your Easy Mexican Rice Bowl

  • Place your salad greens in a medium sized bowl.
  • Add the salsa to the brown rice and mix together to get a Spanish rice. I like to use the cups of rice Minute Rice makes so it's already portioned and easy to prepare in the microwave in 90 seconds.
  • Add the corn, black beans, Spanish rice, cherry tomatoes on top of the salad.
  • Make the dressing.

Avocado Ranch Dressing

  • In a blender add the ranch dressing with 1/2 of the avocado and mix together to get a thick dressing.  Add some plant-based milk if you need to thin the dressing out, if you feel it's too thick. You can opt to add the rest of the avocado to the dressing or add it to your salad.
  • Top the salad with the avocado ranch dressing and add some chopped cilantro.
  • Toss the salad with the dressing and veggies and enjoy!

Notes

Homemade Ranch Dressing

  • 2/3 cup vegan mayonnaise
  • 1/4 cup vegan heavy cream
  • 2 tablespoons white vinegar or apple cider vinegar
  • 2 cloves garlic minced
  • 2 tablespoons chives chopped
  • 1 teaspoon dried or fresh dill
  • 1 teaspoon dried or fresh parsley
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  1. In a mixing bowl, add the mayonnaise, heavy cream, vinegar, garlic, chives, dill, parsley, smoked paprika, salt, and pepper. Whisk everything together until smooth.
  2. Transfer the mixture into a glass jar and shake well, until fluffy and silky. Use immediately or store away to use later.
