Bring on the yumminess with this Fabulous Vegan Fruit Cookie Pizza! This classic soft-baked sugar cookie pizza is topped with a light cream cheese frosting and is bursting with the fresh fruits of the season!

Preheat the oven to 350 F.
Line an 8-inch pan with parchment or lightly spray with non-stick cooking spray, and set aside.
Gluten-Free Sugar Pizza Crust
In a measuring bowl or food processor, mix all ingredients to form a dough.
Transfer the dough to the prepared pan, and press the dough out evenly, pressing down until it covers the bottom of the pan.
Bake 12 minutes on the center rack, then let cool at least 20 minutes in pan.
Once cooled, frost with one of 2 options of frosting and place fruit on top.
Sugar Cookie Crust
Cream the coconut oil and brown sugar together in a medium sized mixing bowl. Add non-dairy milk, vanilla and almond extracts, salt, and baking powder and mix. Last, add all purpose flour and mix together until flour is incorporated in.
Press cookie dough into a prepared pan. (Moisten fingers if necessary or chill a few minutes to make less sticky)
Bake 15-18 minutes on the center rack, then let cool at least 20 minutes.
3 Ingredient Easy Vegan Cream Cheese Frosting
Soften vegan cream cheese at room temperature for an hour or so (or 15-20 seconds in the microwave!) then combine with maple syrup and vanilla extract. Keep mixing with a fork until completely smooth.

Using mixer, mix vegan butter, cream cheese together well, then add in the powdered sugar and vanilla until smooth and creamy
Spread your cream cheese frosting on the cooled cookie crust

Top with your favorite sliced seasonal fruit!
Notes
For easy frosting, use pre-made cream cheese frosting for shortcut.
Add a teaspoon of lemon juice for a sweet lemon cream cheese frosting on your fruit pizza.
