Ingredients

Fudgy No Bake Cosmic Brownies

  • 3 cups almond flour
  • 1 cup peanut butter or nut butter desired
  • ½ cup + 2 tablespoons unsweetened cocoa powder
  • 2-3 scoops plant-based vanilla protein powder - optional can leave out
  • ½ cup agave syrup or maple syrup
  • 1/4 cup dairy-free milk like almond milk, cashew milk, and coconut cream (if leaving out the protein powder, use less milk; start with 2 tablespoons milk and go from there)

Chocolate Ganache & Toppings

  • 2 cups dairy-free chocolate chips or chocolate bar chopped
  • 2 teaspoons coconut oil
  • Vegan Rainbow Candy Coated Chocolate Chips or vegan sprinkles

Instructions

  • Mix the dry ingredients: In a large mixing bowl or food processor, add the almond flour, protein powder, and cocoa powder. Stir well until combined.
  • Blend the wet ingredients: Using a mixer or food processor, mix in the agave syrup, peanut butter, and ¼ cup of dairy-free milk. If you’re skipping the protein powder, use less milk. Start with 2 tablespoons and adjust until you get a thick dough.
  • Check the dough consistency: If the mixture is too thick, add more milk a tablespoon at a time. You want a firm, cookie dough-like consistency, but not too crumbly. If it’s crumbly, just add a splash more milk.
  • Press into a pan: Line an 8-inch baking pan with parchment paper, then press the brownie mixture evenly into the pan. Freeze for 30 minutes to an hour.
  • Make the ganache: In a microwave-safe bowl, melt the dairy-free chocolate chips with the coconut oil in 30-second intervals, stirring in between. Pour the melted chocolate over the brownie layer, spreading it out smoothly.
  • Add toppings: Decorate with vegan rainbow candy-coated chocolate chips or sprinkles, and refrigerate for about 15 minutes until the ganache sets.
  • Slice and serve: Once the ganache is firm, cut into squares and enjoy your cosmic creation!
