These Peanut Butter Banana Oat Cookies are a simple, healthy treat made with just five ingredients: oats, peanut butter, ripe bananas, a touch of sweetener, and chocolate chips. They’re vegan, gluten-free, and naturally sweetened, making them the perfect quick and wholesome snack or dessert!

½cupsemi-sweet vegan chocolate chips
Instructions
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mash the ripe bananas until smooth.
Add peanut butter to the mashed bananas and mix until well combined.
Stir in the oats and sweetener (if using) until fully incorporated.
Fold in the chocolate chips, saving a few to sprinkle on top if desired.
Scoop the dough into 12 balls and place them on the prepared baking sheet. Flatten them slightly with your hand. Sprinkle a few chocolate chips on top if desired.
Bake for 8-10 minutes for thinner cookies, or 10-12 minutes for thicker ones.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a nut-free option, substitute the peanut butter with sunflower seed butter.
You can skip the sweetener if your bananas are very ripe, as they will add plenty of natural sweetness.
Feel free to add mix-ins like chopped nuts, dried fruit, or extra chocolate chips for variation.
These cookies freeze well! Store them in an airtight container in the freezer for up to 3 months.
