Ingredients

  • 2 cups rolled oats gluten-free, if needed
  • ½ cup peanut butter natural, no added sugar
  • 1 ¼ cups mashed ripe banana about 2 large bananas
  • 1-2 tablespoons maple syrup or brown sugar optional, adjust for sweetness
  • ½ cup semi-sweet vegan chocolate chips

Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add peanut butter to the mashed bananas and mix until well combined.
  • Stir in the oats and sweetener (if using) until fully incorporated.
  • Fold in the chocolate chips, saving a few to sprinkle on top if desired.
  • Scoop the dough into 12 balls and place them on the prepared baking sheet. Flatten them slightly with your hand. Sprinkle a few chocolate chips on top if desired.
  • Bake for 8-10 minutes for thinner cookies, or 10-12 minutes for thicker ones.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a nut-free option, substitute the peanut butter with sunflower seed butter.
  • You can skip the sweetener if your bananas are very ripe, as they will add plenty of natural sweetness.
  • Feel free to add mix-ins like chopped nuts, dried fruit, or extra chocolate chips for variation.
  • These cookies freeze well! Store them in an airtight container in the freezer for up to 3 months.
