Ingredients

For the Seitan Dough:

  • 1 cup vital wheat gluten 120g
  • 3 tablespoons nutritional yeast 15g
  • 1 teaspoon garlic powder 3g
  • 1 teaspoon onion powder 3g
  • 1 teaspoon smoked paprika 2g
  • ½ cup vegetable broth 120ml
  • ¼ cup soy sauce 60ml
  • 1 tablespoon olive oil 15ml

For Cooking the Seitan Strips:

  • 1 cup homemade seitan about 150g, sliced into strips (or use store-bought)
  • 1 tablespoon olive oil 15ml

For the Mustard Dip:

  • 2 tablespoons Dijon mustard 30g
  • 1 tablespoon maple syrup 15ml
  • 1 tablespoon apple cider vinegar 15ml

Instructions

Make the Seitan (if homemade):

  • In a large bowl, whisk together the vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.

Mix the Wet Ingredients:

  • In a separate bowl, stir together the vegetable broth, soy sauce, and olive oil.

Combine and Knead:

  • Pour the wet mixture into the dry ingredients. Stir until a dough forms. Knead the dough for 2–3 minutes until firm and elastic.

Steam the Seitan:

  • Shape the dough into a log. Wrap it tightly in foil and steam for 30–40 minutes. Let cool before slicing.

Slice the Seitan:

  • Once cooled, cut about 1 cup (150g) of the seitan into thin strips. Store the rest for another use.

Cook the Seitan Strips:

  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add the seitan strips and cook for about 5 minutes, flipping to get both sides golden and crispy.

Make the Mustard Dip:

  • In a small bowl, whisk together Dijon mustard, maple syrup, and apple cider vinegar until smooth.

Serve and Enjoy:

  • Plate the seitan strips with the mustard dip on the side. Perfect for dipping, snacking, or impressing your omnivore friends.

Instant Pot Steaming Instructions:
Want to steam your seitan in the Instant Pot? Here's how:
  1. Add 1 cup (240ml) of water to the bottom of the Instant Pot.
  2. Place the wrapped seitan log on a trivet or steamer basket inside the pot.
  3. Seal the lid, set the valve to sealing, and cook on Manual/Pressure Cook for 30 minutes.
  4. Let the pressure naturally release for 10 minutes, then do a quick release for any remaining pressure.
  5. Carefully remove the seitan and let it cool before slicing.
