For the Seitan Dough:

Instructions
Make the Seitan (if homemade):
In a large bowl, whisk together the vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.
In a separate bowl, stir together the vegetable broth, soy sauce, and olive oil.

Combine and Knead:
Pour the wet mixture into the dry ingredients. Stir until a dough forms. Knead the dough for 2–3 minutes until firm and elastic.
Steam the Seitan:
Shape the dough into a log. Wrap it tightly in foil and steam for 30–40 minutes. Let cool before slicing.
Slice the Seitan:
Once cooled, cut about 1 cup (150g) of the seitan into thin strips. Store the rest for another use.

Cook the Seitan Strips:
Heat 1 tablespoon olive oil in a skillet over medium heat. Add the seitan strips and cook for about 5 minutes, flipping to get both sides golden and crispy.

In a small bowl, whisk together Dijon mustard, maple syrup, and apple cider vinegar until smooth.

Add 1 cup (240ml) of water to the bottom of the Instant Pot.
Place the wrapped seitan log on a trivet or steamer basket inside the pot.
Seal the lid, set the valve to sealing, and cook on Manual/Pressure Cook for 30 minutes.
Let the pressure naturally release for 10 minutes, then do a quick release for any remaining pressure.
Carefully remove the seitan and let it cool before slicing.
