Instructions
Cook the lentils: Combine 1 cup of lentils with 2 1/2 cups of water in a pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain any excess water.
Add the minced garlic and cook for another minute until fragrant.
Stir in the cooked lentils, tomato sauce, BBQ sauce, smoked paprika, cumin, salt, and pepper.
Reduce the heat to low and simmer for 10-15 minutes to let the flavors meld.
Toast the whole grain buns if desired.
Spoon the lentil mixture onto the buns.
Serve with coleslaw or pickles if desired, and enjoy!
