4tablespoonsolive oil
1packageThe Laughing Cow Garlic & Herb Plant Based Spreadable Cheese Alternative Wedges or Boursin® Dairy-Free Spread (6 oz)
8ouncesdry pasta of choicecooked al dente

Instructions How to Make the Vegan Boursin Tomato Pasta
Preheat the oven to 425 degrees.
In a saucepan, add water and some salt and bring the water to a boil for the pasta. (Once the water starts to boil, cook the pasta until it's al dente according to the instructions on the pasta box. then drain to add to the cherry tomato cheese mixture). At the same time this is going on, roast the cherry tomatoes.
Once the oven is preheated, place the cherry tomatoes in an 8x8 baking dish and drizzle with olive oil and roast for 20 minutes. The cherry tomatoes should be blistering.
Place the boursin cheese single wedges in with the tomatoes and place back in the oven for 5 minutes.
Use the back of a spoon to smoosh the cheese wedges and mix the cheese in with the tomatoes.
Add the cooked pasta and mix everything together. Serve and enjoy!
