Vegan Oreo Marshmallow Brownies

Ingredients

  • 1/2 cup dairy-free dark or semi-sweet chocolate bar chopped or dairy-free chocolate chips
  • 1/2 cup organic sugar white, brown, coconut, or a sugar free substitute can be used
  • 1 cup plain non-dairy Greek yogurt
  • 3/4 cup all purpose flour or gluten-free flour blend
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 cup dairy-free milk
  • 12 Oreo cookies chopped
  • Large or mini vegan marshmallows as many as you like

Instructions

  • Preheat the oven to 350 F. Line an 8x8-inch pan with parchment paper, spray with non-stick cooking spray and set aside.
  • In a small saucepan or in a microwave-safe bowl, add the chopped chocolate. Melt the chocolate. Remove from the heat and add in the sugar and yogurt, and whisk until combined.
  • Next, add the flour, cocoa powder, and baking soda, and mix until just combined. Add your milk and mix well, until fully incorporated. Fold through your marshmallows and chopped Oreo cookies, reserving a few to top the brownies with.
  • Transfer the brownie batter into the lined pan and top with extra Oreos. Bake for 25-30 minutes, or until a toothpick comes out 'just' clean.
  • Remove from the oven and let cool completely, before slicing.
