1/2cupdairy-free dark or semi-sweet chocolate barchopped or dairy-free chocolate chips
1/2cuporganic sugarwhite, brown, coconut, or a sugar free substitute can be used
1cupplain non-dairy Greek yogurt
3/4cupall purpose flour or gluten-free flour blend
1/2cupunsweetened cocoa powder
1/2teaspoonbaking soda
1/2cupdairy-free milk
12Oreo cookieschopped
Large or mini vegan marshmallowsas many as you like
Instructions
Preheat the oven to 350 F. Line an 8x8-inch pan with parchment paper, spray with non-stick cooking spray and set aside.
In a small saucepan or in a microwave-safe bowl, add the chopped chocolate. Melt the chocolate. Remove from the heat and add in the sugar and yogurt, and whisk until combined.
Next, add the flour, cocoa powder, and baking soda, and mix until just combined. Add your milk and mix well, until fully incorporated. Fold through your marshmallows and chopped Oreo cookies, reserving a few to top the brownies with.
Transfer the brownie batter into the lined pan and top with extra Oreos. Bake for 25-30 minutes, or until a toothpick comes out 'just' clean.
Remove from the oven and let cool completely, before slicing.
