Vegan Pecan Turtles

Ingredients

  • 4 ounces roasted pecan halves salted or unsalted
  • 8 ounces vegan caramels like cocomels
  • 1 Tablespoon non-dairy milk of choice
  • 6 ounces non-dairy semi-sweet chocolate melting wafers chocolate chips or chopped chocolate
  • Optional: flake sea salt

Instructions

  • Line a baking sheet with parchment paper for easy, mess-free clean-up. Cluster 3-5 pecans together.
  • Melt your vegan-friendly caramel with heavy cream in a microwave-safe bowl. Microwave it for a minute and stir until smooth. If you need to thin it out, add an extra tablespoon of non-dairy milk and microwave for an additional 30 seconds. Let it cool for one minute and it's ready to use!
  • Drizzle about 1-2 teaspoons of vegan caramel over each pecan cluster. Let the caramel cool and set before adding melted chocolate.
  • Melt your vegan-friendly chocolate in a double boiler or the microwave in just 1 minute. Stir until the texture is silky-smooth; if needed, microwave for an additional 15 seconds. Finally, let the melted chocolate cool off for 1 minute before using.
  • Pour about a teaspoon of chocolate over top of the caramel.
  • Allow to cool for 1-2 minutes and then sprinkle the sea salt over top.
