Ingredients

  • 2 cups vegan Greek yogurt 480 ml
  • ½ cup pumpkin puree 120 g
  • ⅓ to ½ cup maple syrup 80–120 ml
  • 1 teaspoon pumpkin pie spice 2 g
  • 1 cup dairy-free dark chocolate chips 175 g
  • 2 tablespoons peanut butter or 1 tablespoon coconut oil 30 g / 15 ml
  • Granola or pepitas for sprinkling optional (to taste)

Instructions

  • In a medium bowl, whisk together the vegan Greek yogurt, pumpkin puree, maple syrup, and pumpkin pie spice until smooth.

  • Use a cookie scoop or spoon to dollop the mixture onto a parchment-lined baking sheet, or pour it into silicone molds or a lined loaf pan.
  • Place in the freezer for at least 2 hours or until firm. If using a baking sheet, chill the mixture for 30 minutes before scooping to prevent spreading.
  • In a microwave or double boiler, melt the dairy-free chocolate with peanut butter or coconut oil until smooth.

  • Remove the frozen yogurt bites from the freezer and dip them into the melted chocolate. Add granola, pepitas, or sea salt on top if desired.

  • Return the dipped bites to the freezer for a few minutes to let the chocolate harden.
  • Enjoy straight from the freezer, or let them sit at room temperature for 1-2 minutes for a creamier texture.

Notes

  • Consistency Matters: Use vegan Greek yogurt or strain regular vegan yogurt to achieve a thicker texture, which helps the bites hold their shape.
  • Freezing Tip: If dolloping onto a baking sheet, chill the mixture for 30 minutes before scooping to prevent it from spreading too thin.
