Vegan Pumpkin Yogurt Bites are creamy, chocolate-dipped treats perfect for fall. Made with pumpkin puree, vegan Greek yogurt, and dairy-free chocolate, these healthy bites are easy to make, packed with protein, and perfect for snacking or dessert!

Instructions
In a medium bowl, whisk together the vegan Greek yogurt, pumpkin puree, maple syrup, and pumpkin pie spice until smooth.
2 cups vegan Greek yogurt, ½ cup pumpkin puree, ⅓ to ½ cup maple syrup, 1 teaspoon pumpkin pie spice
Use a cookie scoop or spoon to dollop the mixture onto a parchment-lined baking sheet, or pour it into silicone molds or a lined loaf pan.
Place in the freezer for at least 2 hours or until firm. If using a baking sheet, chill the mixture for 30 minutes before scooping to prevent spreading.
In a microwave or double boiler, melt the dairy-free chocolate with peanut butter or coconut oil until smooth.
1 cup dairy-free dark chocolate chips, 2 tablespoons peanut butter or 1 tablespoon coconut oil
Remove the frozen yogurt bites from the freezer and dip them into the melted chocolate. Add granola, pepitas, or sea salt on top if desired.

Return the dipped bites to the freezer for a few minutes to let the chocolate harden.
Enjoy straight from the freezer, or let them sit at room temperature for 1-2 minutes for a creamier texture.
