Ingredients

  • 1 cup rolled oats
  • 1 tbsp chia seeds (chia egg: 1 tbsp chia seeds + 3 tbsp water, mixed and left to sit for 5 min)
  • 1 ½ cups plant-based milk (soy, almond, or oat work well) (approx. 360ml)
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • 1 medium apple, peeled, cored, and diced
  • 2 tbsp maple syrup (or other liquid sweetener)
  • 1 tbsp vegan butter (or oil) for greasing

Instructions

  • Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a small oven-safe skillet or baking dish (approximately 8x8 inches).
  • Blend the Batter: In a blender, combine the rolled oats, plant-based milk, chia egg (once gelled), vanilla extract, cinnamon, nutmeg, salt, and maple syrup. Blend until completely smooth. If using a less powerful blender, consider soaking the oats in the milk for 10 minutes before blending. This will result in a smoother batter.
  • Combine with Apple: Gently fold the diced apple into the smooth batter using a spatula.
  • Bake: Pour the batter into the prepared baking dish. Bake for 35-45 minutes, or until the pudding bake is set and golden brown around the edges.
  • Cool Slightly: Let it cool for a few minutes in the dish before slicing and serving.

Notes

This pudding bake is wonderfully versatile. Feel free to swap the apple for pear or berries. Ensure oats are certified gluten-free if needed for dietary reasons.
