Ingredients
2½CShredded Zucchini1 large zucchini or 2 small
1CUnsweetened Applesauce
1CSugar
1CBrown Sugar
¾COlive oilor oil of choice. I used 1/2 olive oil and 1/2 canola oil
2tspVanilla Extract
3CAll-Purpose Flouror flour of choice, like spelt
1tspSalt
1tspBaking Soda
2tspCinnamon
Instructions
Preheat oven to 375 degrees
Shred or grate 1 large zucchini using food processor or grater/shredder.
2½ C Shredded Zucchini
Combine zucchini, applesauce, sugars, oil and vanilla together and mix well.
1 C Unsweetened Applesauce, 1 C Sugar, 1 C Brown Sugar, ¾ C Olive oil, 2 tsp Vanilla Extract
In another bowl, combine flour, salt, baking soda and cinnamon & whisk together.
