1cupunsweetened almond milk or any non-dairy milk will work
2tablespoonslemon juice1 lemon - can also use lemon zest from lemon
1/3cupcanola oil - can also sub with melted vegan butter avocado oil or melted coconut oil
1/2cuporganic sugar - can also sub with maple syrup
1teaspoonvanilla extract
2cupsall-purpose flour
2 1/2teaspoonsbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
2cupsfresh blueberries - frozen can be used
Optional: Top with more organic sugar on top for more sweetness or make a lemon glaze if desired.
Lemon Glaze
1cuporganic powdered sugar
2tablespoonslemon juicefrom 1 lemon
Optional: lemon zest
Instructions
Easy Vegan Fluffy Blueberry Muffins
Preheat oven to 425°F. Line a muffin tin with baking cups, or spray tins with non-stick cooking spray. Set aside.
In a large mixing bowl, combine the milk, lemon juice/zest together and allow the mixture to curdle for up to 5 minutes.
Whisk in the oil, sugar and vanilla to the curdled mixture to mix together.
Follow with flour, baking powder, baking soda, and salt, stirring until just combined with lumps in the mixture. Fold in the blueberries.
Using a large cookie scoop, fill each muffin cup about full with the batter, and then sprinkle tops with sugar if desired.
Bake for 13-15 minutes, or until a toothpick inserted into the center of a muffin comes out cleanly. Remove muffins from the oven, and allow to cool for five minutes in the pan, and then transfer to a cooling rack to cool completely.
Lemon Glaze
Top with lemon glaze if you want by mixing together the organic powdered sugar and lemon together and drizzle on top of muffins. Let glaze set.
