Instructions How to Make Frozen Blueberry Yogurt Cups
Line a muffin pan with muffin liners or you can use a silicone muffin pan. Set aside.
Blend the blueberries in a food processor or blender on high speed until it becomes a smoothie-like consistency. Stir in the agave and yogurt and gently mix everything together. If you want a tie-dye look to your yogurt cups—do not fully blend the yogurt and blueberries, so you get white and blue swirls. The mixture will be thick. Taste it and if you need it sweeter, you can add a little more agave at this time.
If you want to add some granola, add a spoonful of your favorite granola into the bottom of each muffin cup. Press firmly with your fingers to make a sturdy base, then pour the blueberry yogurt mixture evenly into each of the cups and freeze for 2-4 hours.
Once they are frozen, pop them out of the silicone molds and place them in a freezer bag and transfer them to the freezer until you're ready to indulge!
These yogurt cups will get hard in the freezer so make sure to thaw them for 5-10 minutes before serving.
