This is an easy recipe that is perfect for breakfast, snacking, or dessert. These raw vegan chocolate chip cookie dough bites are healthy, and perfectly safe to eat raw. They're sweetened by the dates, chocolate chips, and applesauce. They're such a delightful energy-boosting snack!

Ingredients

  • ½ cup Medjool dates
  • ½ cup tahini
  • ½ cup natural peanut butter
  • ½ tsp vanilla extract
  • ¼ cup garbanzo flour *see notes°
  • 2 Tbsp applesauce (unsweetened or sweetened)
  • ¼ cup vegan chocolate chips

Instructions

  • In a food processor combine dates, tahini, peanut butter, & vanilla. Process until smooth. You could also use a mixer if you don't have a food processor.
  • Empty the food processor contents into a mixing bowl and add the garbanzo flour and applesauce. Mix well. Fold in chocolate chips.
  • Spread the cookie dough onto a small/medium dish. Slice it up and enjoy! We recommend to keep the dough chilled for best texture.

Notes

*Instead of garbanzo flour you can also coconut flour, oat flour, or almond flour.  You can also substitute all-purpose flour if you bake the flour at 350F for about 5 minutes first.
