Healthy Vegan Loaf with Spiced Pumpkin and Applesauce

An easy and extremely delicious Vegan bread loaf with hints of spice cake, pumpkin, and apple with no refined sugar.

Equipment

Ingredients

  • 3 tablespoons ground flax seed
  • 1 cup non-dairy milk
  • 1 tablespoon apple cider vinegar or you can use regular vinegar if you don't have apple cider vinegar
  • 2 cups Flour whole white wheat or all-purpose
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsweetened applesauce
  • 1/2 cup pumpkin puree
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1/3 cup pure maple syrup

Instructions

  • In a small bowl stir in 3 tbsp ground flax into 1/3 cup water. Let it sit for 5 minutes.
  • Combine 1 tbsp apple cider vinegar with 1 cup of non-dairy milk. Let it sit for 5 minutes.
  • Preheat oven to 350 degrees.
  • In medium bowl stir together the dry ingredients: 2 cups flour, 1 & 1/2 tsp baking soda, 1/2 tsp ginger, 1/2 tsp nutmeg, and 2 tsp cinnamon.
  • In a large bowl stir together the wet ingredients: 1/4 cup applesauce, 1/2 cup pumpkin, 1/4 cup molasses, 1 tsp vanilla, the flax mixed with water, and the milk mixed with apple cider vinegar.
  • Add the dry ingredients to the wet ingredients and stir until combined. Pour into a greased loaf pan and bake at 350 degrees for 60-70 minutes, or until a toothpick comes out clean from the center.
  • Let the bread rest in its loaf pan for at least 20 minutes before trying to take it out.

Notes

  • If you don't have molasses, you can leave it out! 
  • If you want this bread a little sweeter, add 1/4 cup organic brown sugar to your recipe, along with the maple syrup.
  • Add a simple vanilla glaze on top for a sweet topping on your loaf!
