Homemade Granola with Dried Fruit

  • 2 1/2 cups old-fashioned rolled oats
  • 1 cup slivered or whole roasted almonds or pecans, walnuts or pistachios
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/2 cup light agave nectar or pure maple syrup or a combination of both
  • 1/4 cup olive oil or coconut oil, melted
  • 1 Tablespoon pure vanilla extract
  • 1 cup dried berries & golden raisins mix or whatever dried fruit you want to add in

Instructions How to Make Homemade Granola with Dried Fruit

  • Preheat oven to 300°F. Line a large baking sheet with parchment paper or a silicone baking mat, that way the sweetener from the granola doesn’t stick to your baking sheet.
  • In a large bowl, stir together the oats, almonds, cinnamon, and salt. Set aside.
  • In a medium bowl, whisk together the light agave nectar or maple syrup, oil and vanilla together until combined. Pour mixture over the oats and toss to coat all the oats.  Mix in the dried fruit.
  • Spread out onto the prepared baking sheet and bake for 50 minutes.
  • Allow granola to cool completely before breaking it up, so it stays crunchy.
