Mixed Berry Protein Baked Oatmeal

This vegan mixed berry protein baked oatmeal combines rolled oats, plant-based vanilla protein powder, banana, peanut butter, chia, flax, and fresh or frozen berries. It takes 10 minutes to prepare and 45 minutes to bake.

Ingredients

  • 2 cups unsweetened almond milk or another unsweetened non-dairy milk
  • 1/2 cup plant-based vanilla protein powder Use a vegan product; verify that it is labeled gluten-free if needed.
  • 2 tablespoons flax seeds
  • 2 tablespoons chia seeds
  • 2 teaspoons ground cinnamon
  • 2 tablespoons agave or maple syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 medium ripe banana, mashed
  • 1/4 cup no-added-sugar creamy peanut butter or another nut or seed butter
  • 2 cups old-fashioned rolled oats Use certified gluten-free old-fashioned rolled oats if needed.
  • 1 1/2 cups mixed fresh or frozen berries A blend of strawberries, blackberries, raspberries, and blueberries works well.

Instructions

  • Preheat the oven to 375°F (190°C). Lightly coat an 8-inch baking dish with nonstick cooking spray or line it with parchment paper.
  • In a large bowl, whisk together 2 cups non-dairy milk, 1/2 cup plant-based vanilla protein powder, 2 tablespoons flax seeds, 2 tablespoons chia seeds, 2 teaspoons cinnamon, 2 tablespoons agave or maple syrup, 1/2 teaspoon salt, 1 teaspoon vanilla extract, and 1 teaspoon baking powder.
  • In a small bowl, mash 1 medium ripe banana and stir in 1/4 cup creamy peanut butter. Add this mixture to the wet ingredients and whisk until well combined.
  • Add 2 cups old-fashioned rolled oats and stir with a rubber spatula or wooden spoon until evenly combined.
  • Gently fold in 3/4 cup of the berries. Avoid overmixing, which can discolor the oat mixture.
  • Transfer the mixture to the prepared baking dish and scatter the remaining 3/4 cup berries over the top.
  • Bake for 45 minutes, or until the center is set.
  • Let the baked oatmeal cool before slicing it into six large servings. Serve as desired with non-dairy milk, maple syrup, or agave.

Notes

The 55-minute total includes 10 minutes of preparation and 45 minutes of baking; cooling time is not included. Protein-powder sweetness and absorbency vary by brand, so the final flavor and texture may differ slightly. For a gluten-free result, use certified gluten-free oats and verify every packaged ingredient.
