Ingredients

For the Brownies:

  • 2 cups pecans
  • 8 ounces pitted dates Sunsweet or any soft, chewy variety
  • 1/4 cup unsweetened cocoa powder
  • 3-4 tablespoons water
  • 1 1/2 teaspoons coconut oil melted
  • 2 tablespoons creamy peanut butter

For the Chocolate Peanut Butter Ganache:

  • 3/4 cup semisweet vegan chocolate chips
  • 2 tablespoons creamy peanut butter

Instructions

  • Prepare Your Pan: Line a 9x5 loaf pan with parchment paper and spray it lightly with non-stick cooking spray.
  • Create the Brownie Mixture: In a food processor, pulse the pecans until they’re finely chopped. Add in the dates, cocoa powder, peanut butter, water, and melted coconut oil. Blend until everything comes together in a sticky dough that you can easily roll into a ball.

  • Press and Chill: Press the mixture evenly into your prepared pan, using your hands or a rubber spatula to pack it down firmly. Pop the pan into the fridge for about 45 minutes to let the brownies firm up.
  • Make the Ganache: In a microwave-safe bowl, combine the chocolate chips and peanut butter. Microwave in 30-second bursts, stirring after each, until the mixture is smooth and creamy. This is the decadent topping for our vegan no bake brownies.

  • Top the Brownies: Pour the ganache over the chilled brownies and spread it evenly with a spatula. Now is the time to add some of your favorite toppings now if you wish.
  • Chill Again: Place the pan back in the fridge for another 15 minutes or until the ganache is set.
  • Serve and Enjoy: Once the ganache is firm, lift the brownies out of the pan using the parchment paper, cut into squares or bars, and enjoy!
