Instructions
Soft Vegan Sugar Cookies
In a small bowl stir together 1.5 tbsp ground flax and 2.5 tbsp water. Let it sit for 5 minutes. This will be our "flax egg" and serve as a binder.
In a large bowl cream 1/2 cup butter. Then add the "flax egg" mixture, 1/2 cup sugar, 1/4 cup brown sugar, and 1 tsp vanilla. Beat until creamy.
In a medium bowl stir together these dry ingredients: 1.75 cups flour, 1 tsp baking powder, 1/2 tbsp corn starch, 1/2 tsp baking soda, and 1/4 tsp salt.
Add dry ingredients to wet ingredients, and add 1 tbsp non-dairy milk. Stir together with a spoon or spatula until combined. Take care to not over-mix. The dough should feel fairly wet.
Put the dough into the medium bowl and place in the refrigerator for at least 15 minutes. I like to go ahead and scoop the dough balls and roll them and place them in the fridge on a baking sheet.
Preheat oven to 350 degrees.
Put parchment paper on a cookie pan. Roll balls (slightly smaller than a golf ball) and place them onto the parchment paper. Bake at 350 degrees for 10-12 minutes. The cookies will be very soft coming out, but they will firm up to the perfect texture after cooling for 10-15 minutes.
Let cookies cool completely before icing or frosting.
Notes
Simple Vegan Vanilla Icing Ingredients We’ve included a simple vanilla Vegan icing to put on the cookies at the end of the recipe for your pleasure 🙂 If you’re adding sprinkles, be careful to make sure they’re Vegan like these here. If you want to add icing to the cookies here’s a simple recipe for a white vanilla Vegan frosting:
1 cup powdered sugar
1 tablespoon non-dairy milk. add a little more if you want thinner
1 teaspoon vanilla extract
Combine the powdered sugar, milk, and vanilla extract in small bowl. Mix well until the glaze is a smooth consistency. We prefer a thick frosting that will not run off of the cookies.
Simple Vanilla Buttercream Frosting Ingredients
4 cups organic powdered sugar
1/2 cup Vegan butter, room temperature
2 - 3 tablespoons almond milk or non-dairy milk of choice
2 teaspoons vanilla extract or any extract you wish to use
¼ teaspoon salt
Using mixer, in a large bowl, whip the butter and salt for about a minute. Add in confectioner’s sugar beating on low after each addition. Scrape the bowl down and repeat the process.
Add a tablespoon of the milk while mixing on low then add the vanilla. Beat until you have an even, fluffy consistency. You can add more milk if desired for a thinner consistency.
Ideas for Decorating Sugar CookiesAs we said earlier, these are fantastic for customizing for any holiday, birthday or any day of the week, because as we all know, cookies always make everything better! Yaaaayyyy!
Sprinkles! The more sprinkles the better at our house! I love the colored sugar on the cookies, they all look good and they look old fashioned and traditional! Just color it with some vegan food color to make the color you want.
Color your frosting with your favorite color or colors! Use a good vegan food color. Use a sugar glaze or an actual buttercream frosting to top your cookies!
Besides the favorite obvious vanilla extract, add your favorite extract like peppermint, almond or lemon!
