Ingredients

  • 1 pkg extra firm tofu cubed
  • 3/4 cup vegan mayo
  • 1 tbsp dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp turmeric
  • 1 tsp dried tarragon
  • dash black pepper

Instructions

  • Dry tofu with paper towel. Chop the tofu into small cubes.
  • In a large bowl mix tofu, mayo, mustard, salt, garlic powder, turmeric, and tarragon.
  • Scoop mixed salad onto sandwich bun, toast, or bagel if desired.
