Ingredients

  • 1 ready pie crust
  • 12 oz extra firm silken tofu must be silken!
  • 2/3 cup non-dairy chocolate chips melted
  • 1/2 cup peanut butter

Optional

  • 1 tsp vanilla extract
  • maple syrup and/or brown sugar to add sweetness

Instructions

  • Drain excess liquid from silken tofu and place it in the food processor or blender.
  • Add 1/2 cup peanut butter to the tofu, and process or blend until smooth.
  • Melt chocolate chips in the microwave for 1 minute, and then add it to the tofu and peanut butter mixture. Process or blend again until creamy.
  • Test the pie filling to make sure it's sweet enough. If you're using unsweetened peanut butter and/or unsweetened chocolate, it might not be sweet enough. If that's the case, add some maple syrup and/or brown sugar to get your desired sweetness.
  • Pour the filling mixture into the ready pie crust. Refrigerate for at least 1 hour so that the pie sets. If you leave it overnight it's even better. You can top the pie with fresh berries, chocolate chips, or vegan whipped cream.
