Ingredients
2cupswhole wheat flourcan also sub with all-purpose flour or oat flour, or 1/2 oats and half flour
¼cuppure maple syrup
½cup +2Tbsporganic brown sugar(divided)
3Tbspground flaxseed(+½ cup water to make flax eggs)
1Tbspmolasses
1½tspground cinnamon(divided)
½tspsalt
¼cupoil of choice(we used canola)
½cupnon-dairy milk of choice(we used unsweetened almond)
Instructions
Preheat oven to 350°F and grease an 8 x 11 baking dish.
Combine 3 Tbsp ground flaxseed with ½ cup of water in a small bowl. Stir and let it sit for at least 5 minutes.
In a large mixing bowl stir together all ingredients EXCEPT only use 1 tsp of the cinnamon, and only use ½ cup of brown sugar. The remaining ½ tsp cinnamon and 2 Tbsp brown sugar will be used for the topping.
Pour the mixture into the greased baking dish and smooth it evenly.
In a small bowl stir together 2 Tbsp brown sugar and ½ tsp cinnamon. Sprinkle it on top of the mixture. Bake at 350° for 30 minutes.
Remove from the oven and let it cool a bit before cutting into squares.
