Rock and Roll! Vegan S'mores Bars are here to stay! Made with toasty, fluffy marshmallows, chocolate chips and a rich buttery graham shortbread crust, these comforting s'mores bars are so swoon-worthy delicious, we can't stay out of them!
1½cupsall-purpose flouror gluten-free flour like Bob’s Red Mill 1 to 1
⅓cuporganic sugar of choice
5whole vegan graham crackers (nabisco / keebler)or ½ cup + 3 tablespoons graham cracker crumbs
½tspsalt
7tbspcold vegan buttercut into cubes
Toppings
1cupvegan chocolate chipschunks or candy bar, more if you want some for the top of the marshmallow
1package mini or large marshmallowsvegan
Instructions
Preheat oven to 350°F. Spray an 8x8 baking pan with non-stick cooking spray, line with parchment paper or tin foil for easy removal if preferred, spraying with non-stick cooking spray.
Place the sugar, flour, graham crumbs, and salt in food processor. Pulse to combine. Add butter pieces, pulse to crumbs.
Press into pan.
Bake until edges begin to brown, about 16-18 minutes.
Set oven control to broil and remove pan from oven and immediately sprinkle 1 cup chocolate chips and let stand for 5 minutes for the chocolate to start melting.
Sprinkle marshmallows over chocolate. Broil with top 5 to 6 inches from heat 20 to 30 seconds or until marshmallows are toasted. (Watch closely; marshmallows will brown quickly.) Cool 10 minutes. Optional: Add more chocolate chips on top if you wish. You also can melt chocolate chips and drizzle on top.
