  • 1 cup brown rice or wild rice, cooked (I use Minute Rice)
  • 1/4 cup salsa
  • cherry tomatoes

  • 1 avocado, diced

Instructions How to Make Your Easy Mexican Rice Bowl with Avocado Ranch Dressing

  1. Place your salad greens in a medium sized bowl.
  2. Add the salsa and some cilantro to the cooked rice and mix together to get a Spanish rice. I like to use the ready-made rice  – Minute Rice. It is already portioned and easy to prepare in the microwave in 90 seconds. Plus, they have all kinds of choices of rice and quinoa you can choose from as well.
  3. Add the corn, black beans, Spanish rice, cherry tomatoes on top of the salad.
  4. Make the dressing.

Easy avocado Dressing

  1. In a blender add the vegan ranch dressing with 1/2 of the avocado and mix together to get a thick dressing.  Add some plant-based milk if you need to thin the dressing out, if you feel it’s too thick. You can opt to add the rest of the avocado to the dressing or add it to your salad.

  • 2 tablespoons white vinegar or apple cider vinegar
  • 2 cloves garlic minced
  • 2 tablespoons chives chopped
  • 1 teaspoon dried or fresh dill
  • 1 teaspoon dried or fresh parsley
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon pepper
  1. In a mixing bowl, add the mayonnaise, heavy cream, vinegar, garlic, chives, dill, parsley, smoked paprika, salt, and pepper. Whisk everything together until smooth.
  2. Transfer the mixture into a glass jar and shake well, until fluffy and silky. Use immediately or store away to use later.
