Tips for Making Vegan Chocolate Desserts
A few things I’ve learned from testing a lot of plant-based chocolate recipes:
Choose good chocolate. The quality of your chocolate matters more in vegan baking than in conventional baking because there’s less butter and cream to mask inferior chocolate. Look for dark chocolate with at least 60% cacao. Many dark chocolates are naturally vegan, but always check the label for milk solids.
Coconut cream is your friend. Full-fat coconut cream (not coconut milk) is the closest vegan equivalent to heavy cream. Use the thick part from a chilled can for ganache, mousse, and frosting. It whips beautifully and sets firm.
Don’t overmix cake and cupcake batters. Without eggs providing structure, overmixing leads to tough, dense results. Mix just until combined and you’ll get a much better crumb.
Aquafaba works for fluffy textures. The liquid from canned chickpeas whips into stiff peaks and can replace egg whites in mousses and meringues. It sounds strange, but it genuinely works.
Let no-bake desserts set properly. Most no-bake vegan chocolate desserts need at least 2 hours in the fridge (sometimes overnight) to firm up. Rushing this step leads to disappointment.
