Health Benefits Of Our Easy Date Snickers

  • Medjool dates are really good for your body! They have lots of fiber to help your digestion, and are full of potassium to keep your nerves and blood pressure in check. They also have antioxidants to combat free radicals in your body. Dates can also help your heart and bones because they have important things like fiber, nutrients, magnesium, and calcium. Plus, they have B vitamins that give you energy because dates have natural sugar in them.  So get on board with eating more dates!
  • By using high-quality, dark chocolate you’re also getting the powerful antioxidant properties of flavanols in chocolate. Dark chocolate also contains a variety of micronutrients that are important for mood and energy stability. Dark chocolate is also a sneaky source of fiber! Yes, the same kind of fiber that helps feed healthy gut bacteria and keep our digestive tract and immune system operating smoothly.  So, bring on the dairy-free dark chocolate!
  • The peanut butter and peanuts have lots of protein, fiber and healthy fats so that’s also a win!
  • As far as the sea salt, I love a good sweet and salty dessert, and by topping these dates, this really brings out all the flavors in every bite of this indulgent Date Snickers recipe!

Ingredients You Need

Easy healthy Date Snickers recipe

  • Medjool dates, pitted, as many as you like
  • Natural sugar-free Jif peanut butter, can also use almond butter, cashew butter, pistachio butter
  • organic roasted peanuts, or use almonds, pecans, cashews or pistachios
  • dairy-free dark chocolate (We like Enjoy Life chocolate chunks or GHIRARDELLI Non-Dairy Dark Premium Chocolate Chips for baking)
  • Sea salt

Instructions How to Make Date Snickers Candy

  1. Place parchment paper on a baking sheet, set aside.
  2. First, open each date up to make a pocket. Then, put them on the parchment paper.
  3. Add a teaspoon or more of peanut butter to fill each date, then top with some peanuts. While the dates freeze, melt your chocolate. Let the chocolate cool slightly before moving on.
  4. Melt some dark chocolate in the microwave in 30 second increments until melted, I used about a half cup of chocolate chips for drizzling. I like to put my chocolate in a disposable pastry bag and snip a small hole in the end and drizzle on top of the dates. If you decide you want to completely dip them in chocolate, you’ll have to melt more chocolate, and if the chocolate is really thick, add ½ teaspoon or more of some coconut oil or canola oil to your chocolate to thin it out.  You can go heavy or light on the chocolate, depending on what you like.
  5. Sprinkle with sea salt, then transfer the dates to a plate, (unless you can fit your baking sheet in the fridge) and place dates in the fridge so the chocolate firms up.
  6. Once the chocolate has firmed up, enjoy immediately or store in an airtight container and eat whenever you feel like quick healthy snack on the go!
