Easy healthy Date Snickers recipe
- Medjool dates, pitted, as many as you like
- Natural sugar-free Jif peanut butter, can also use almond butter, cashew butter, pistachio butter
- organic roasted peanuts, or use almonds, pecans, cashews or pistachios
- dairy-free dark chocolate (We like Enjoy Life chocolate chunks or GHIRARDELLI Non-Dairy Dark Premium Chocolate Chips for baking)
- Sea salt
Instructions How to Make Date Snickers Candy
- Place parchment paper on a baking sheet, set aside.
- First, open each date up to make a pocket. Then, put them on the parchment paper.
- Add a teaspoon or more of peanut butter to fill each date, then top with some peanuts. While the dates freeze, melt your chocolate. Let the chocolate cool slightly before moving on.
- Melt some dark chocolate in the microwave in 30 second increments until melted, I used about a half cup of chocolate chips for drizzling. I like to put my chocolate in a disposable pastry bag and snip a small hole in the end and drizzle on top of the dates. If you decide you want to completely dip them in chocolate, you’ll have to melt more chocolate, and if the chocolate is really thick, add ½ teaspoon or more of some coconut oil or canola oil to your chocolate to thin it out. You can go heavy or light on the chocolate, depending on what you like.
- Sprinkle with sea salt, then transfer the dates to a plate, (unless you can fit your baking sheet in the fridge) and place dates in the fridge so the chocolate firms up.
- Once the chocolate has firmed up, enjoy immediately or store in an airtight container and eat whenever you feel like quick healthy snack on the go!
More Variations
- Besides peanut butter, use almond butter, cashew butter, pistachio butter or sunflower butter in this date Snickers recipe.
- WE used organic roasted peanuts, but use any crunchy nuts you like, like almonds, pecans, cashews or pistachios, or leave them out completely!
- If you want a more caramel type peanut butter, add a little maple syrup and melted coconut oil to your peanut butter for a this quick and easy homemade caramel. You can even add in some vanilla extract.
