As far as the frosting, I made some vegan buttercream and added some purple food coloring gel and mix it up. I used it for the eyeballs and for the Oreo bat to sit on top of. I added some oreo crumbs as well. But you can buy vegan frosting at the store and you can easily color it with whatever color of frosting you want for the eyeballs and under the bat.

Ingredients You Need
Vegan Chocolate Cupcakes
- 1 cup almond milk + 1 teaspoon white vinegar
- โ cup canola oil
- ยพ cups granulated sugar
- 1 teaspoon chocolate coffee or vanilla extract
- 1 cup all purpose flour or gluten free flour, like Bobโs Red Mill
- โ cup unsweetened cocoa powder
- ยพ teaspoon baking soda
- ยฝ teaspoon baking powder
- โ teaspoon salt
Homemade Frostingย
- 1 cup Vegan butter, room temperature
- 3 cups powdered sugar, add more if you want firmer
- 1 teaspoon vanilla extract
- 1-2 tablespoons almond milk
- Generous pinch of salt
- Purple gel color / food coloring
Instructions How to Make Halloween Oreo Bat Chocolate Cupcakesย
- Preheat oven to 350 degrees. Line prepared muffin tins with paper liners. Lightly spray with non stick cooking spray and set aside.
Vegan Chocolate Cupcakes
- In a measuring cup, stir almond milk and vinegar together. Set aside to curdle for 5-10 minutes.
- In a large bowl, using mixer, beat oil and sugar together. Mixture will be gritty.
- Add in extract of choice and mix.
- In a different bowl, whisk together all dry ingredients together until evenly mixed. Alternate mixing in wet and dry ingredients to the oil/sugar batter starting and ending with dry.
- Pour evenly into prepared muffin tins with paper liners, fill 3/4 of the way full and bake 15-18 minutes.
- Make Chocolate frosting while cupcakes are cooling.
Buttercream Frosting
- Using mixer, in a large mixing bowl, mix together on low speed the butter, powdered sugar, vanilla extract together. Gradually speed up mixer to medium-high and whip until frosting reaches desired consistency until light, fluffy and smooth, 1-2 minutes.ย
- Color the frosting with purple food coloring gel.
- When the cupcakes are fully cool, place most of purple frosting in a pastry bag with a large star tip and pipe an purple swirl on top of of each cupcakes. Reserve some of the frosting for the purple eyeballs.
Make the Oreo Bats
- Make the Oreo bats by preparing a cookie sheet with parchment paper.ย
- To make the bat bodies, carefully twist an Oreo cookie in half, so you can place the wings on top of the cookie with the oreo with the frosting facing upward.
- To make the wings, twist another Oreo cookie in half and gently break or cut the cookies into two to make wings.ย ย
- To assemble the bats, place the two wings on top of the cookie with the oreo frosting and place the other half of the Oreo on top to create the bat shape. Gently press the cookie down on top of the cookie to create the bat.ย If itโs not sticking, add some of the extra frosting from some of the cookies you are breaking apart and add some, like itโs glue. If thatโs not working for you, you can melt some chocolate and attach the parts together.
- Take some of the purple frosting and add some to a pastry bag with a small hole and pipe some eyeballs onto your bats.ย Take mini chocolate chips to make the bat eye pupils. Once they are assemble together, place a bat into the frosting on each of the cupcakes. You can also add mini chocolate chips to add some bat ears, which I did not do, but it would look cute!
