Cook Your Pasta Al Dente – So What is Al Dente?
Al dente pasta just means to cook it a little bit less. The words come from Italian and mean “to the tooth”.
This means the pasta will be a little tough when you bite it. The more you cook it, it becomes soft and sometimes mushy pasta, which isn’t a good bite. It’s better to cook a little bit less than more, especially if you have leftovers.
Ingredients You Need
- Olive Oil or Grapeseed Oil
- Minced Garlic
- Bell Pepper
- Tomatoes
- Fresh Spinach
- Italian Seasoning
- Vegetable Broth
- Pasta of any kind (8 ounces)
How to Make Quick Vegan One Pot Pasta
- In a wide pot or tall skillet heat 2 tbsp oil on medium heat. Add minced garlic and green pepper. Cook for 3-4 minutes until garlic just begins to brown.
- Add fresh diced tomatoes, fresh spinach, 2 tsp Italian seasoning, and 2 cups vegetable broth to pot with garlic and bell peppers. Stir well, then add 2 cups/8 ounces of pasta, and stir.
- Reduce heat to medium-low, and cover. Cook for 8-10 minutes until pasta is tender. Add sea salt to taste, and serve. Don’t over cook the pasta, you want it al dente!
- If you like, you can top pasta with Vegan parmesan, fresh parsley, and/or fresh basil.
Notes About Pasta
Don’t use an entire 16 oz. package of pasta, unless you plan to double all of the other ingredients! However, make sure to double the recipe if you’re serving more than 3 or you want leftovers! Big batch please!

Ingredients

- 1 handful fresh spinach 1.5 to 2 cups worth
- 2 teaspoons dried Italian seasoning
- 2 cups vegetable broth
- 8 oz pasta (or 2 cups) we chose linguine, but you can use others
