Bring on the yumminess with this Fabulous Fruit Cookie Pizza! This classic soft-baked sugar cookie pizza is topped with a light cream cheese frosting and is bursting with the fresh fruits of the season!
We’re summer inspired for your next picnic, BBQ, potluck, snacking-time and do we daresay, breakfast? Why not? We’re totally cool with it!
Since the 4th of July is coming up, we decided to go with a Red, White & Blue theme. Of course any seasonal fruit would be amazing on this pizza, because when you put cream cheese frosting and a sugar cookie in the mix, how could it not be?
When choosing fruits, make sure your fruit is fresh or if canned or frozen, drained very well, so it doesn’t dilute the cream cheese filling on top of the pizza.
Prepping ahead TIPS if you want to make ahead!
You can make the cookie crust and cream cheese frosting up to several days ahead and just keep it in the fridge until you’re ready to go! Just be sure and remove the cream cheese frosting from the fridge an hour or so before assembling everything so it can soften up enough to spread, if you do!
It’s best to assemble your fruit pizza a couple of hours ahead of when you plan to serve it.
You could even try adding a teaspoon of lemon juice for a sweet lemon cream cheese frosting on your fruit pizza.
We’ve given you 2 options on your sugar cookie crust! Both are vegan, yet one is gluten-free and flourless for those who want healthier or allergy-free options. Both very delicious!
We’ve also given you 3 options for your cream cheese frosting. One being a 3 ingredient, healthier option. The 2nd option is a cream cheese frosting with more ingredients, like vegan butter and powdered sugar added in for a thicker frosting. 3rd option, buy it already made. Most tubs of store-bought frostings are vegan, just check online to make sure.
Regardless what crust or fruits you choose, you’ll definitely find this delectable fruit pizza a crowd-pleaser for sure! We made this in an 8×8 pan, but you can use any pizza pan or any baking sheet. Double recipe for larger crowd!

Fabulous Fruit Cookie Pizza
Ingredients
Gluten-Free Sugar Cookie Crust
- 2 cups almond flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 tsp vanilla extract
- 1 1/2 tbsp oil of choice
- 1/4 cup pure maple syrup
Sugar Cookie Crust
- 1/3 cup + 1 tablespoon sugar of choice
- 1/3 cup + 1 tablespoon coconut oil
- 1 tsp vanilla extract
- 1/4 tsp almond extract
- 1 tablespoon non dairy milk
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup + 2 tablespoons all purpose flour
3 Ingredient Easy Vegan Cream Cheese Frosting
- 4 oz vegan Cream Cheese softened
- 2 tbsp maple syrup or agave nectar
- 1 tsp pure vanilla extract
Vegan Cream Cheese Frosting
- 1/4 cup vegan butter softened
- 4 ounces vegan cream cheese
- 1 teaspoon pure vanilla extract
- 2 cups powdered sugar more if needed
Fruit
- 2 cups fruit of choice, sliced or whole fresh or very well drained
Instructions
- Instructions
- Preheat the oven to 350 F.
- Line an 8-inch pan with parchment or lightly spray with non-stick cooking spray, and set aside.
Gluten-Free Sugar Pizza Crust
- In a measuring bowl or food processor, mix all ingredients to form a dough.
- Bake 12 minutes on the center rack, then let cool at least 20 minutes in pan.
- Once cooled, frost with one of 2 options of frosting and place fruit on top.
Sugar Cookie Crust
- Cream the coconut oil and brown sugar together in a medium sized mixing bowl. Add non-dairy milk, vanilla and almond extracts, salt, and baking powder and mix. Last, add all purpose flour and mix together until flour is incorporated in.
- Press cookie dough into a prepared pan. (Moisten fingers if necessary or chill a few minutes to make less sticky)
- Bake 15-18 minutes on the center rack, then let cool at least 20 minutes.
3 Ingredient Easy Vegan Cream Cheese Frosting
- Soften vegan cream cheese at room temperature for an hour or so (or 15-20 seconds in the microwave!) then combine with maple syrup and vanilla extract. Keep mixing with a fork until completely smooth.
Vegan Cream Cheese Frosting
- Using mixer, mix vegan butter, cream cheese together well, then add in the powdered sugar and vanilla until smooth and creamy
- Spread your cream cheese frosting on the cooled cookie crust
Fruit
- Top with your favorite sliced seasonal fruit!
Notes
- For easy frosting, use pre-made cream cheese frosting for shortcut.
- Add a teaspoon of lemon juice for a sweet lemon cream cheese frosting on your fruit pizza.
